1. St. Patrick's Day Stew

There's nothing like good old steak and potatoes. This recipe from delish gives you hearty meat with soft and tasty vegetables that are sure to keep you cozy this Saint Patrick's Day! Feel free to leave out the Guinness from this recipe. This St. Patrick's Day meal will taste just as magically delicious without it!

    Ingredients

  • 3 tbsp. extra-virgin olive oil
  • 900 g braising steak or stew meat cubed into 2.5cm pieces
  • Salt
  • Freshly ground black pepper
  • 1 onion chopped
  • 2 medium carrots peeled and cut into rounds
  • 2 stalks celery chopped
  • 3 cloves garlic crushed
  • 3 medium russet potatoes peeled and cut into large chunks
  • 1 l low-sodium beef stock
  • 450 ml Guinness
  • 2 tsp fresh thyme
  • Freshly chopped parsley for serving

    In a large Dutch oven over medium heat, heat 2 tablespoons of oil. Season beef with salt and pepper, then add to pot and cook on all sides until seared, 10 minutes, working in batches if necessary. Transfer beef to a plate.

    In the same pot, add the remaining tablespoon oil and cook onion, carrots, and celery until soft, 5 minutes. Season with salt and pepper. Add garlic and cook until fragrant, 1 minute.

    Add beef back to Dutch oven, then add potatoes, stock, beer, and thyme. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper. Cover and let simmer until beef and potatoes are tender. After approximately 30 minutes, it should be ready. Garnish with parsley before serving

2. St. Patrick's Pesto Potato Gnocchi

If you're heading out to eat on March 17th, consider trying a delicious green dish from Che Pizza in Metuchen, New Jersey (my hometown!) Try ordering the Gnocchi Genovese from their menu; it's a delectable gnocchi dish with rich pesto sauce. Although gnocchi is an Italian dish, you'll feel as lucky as a four-leaf clover after you've had this meal at one of my favorite places!

3. Maureen Joyce's Irish Soda Bread 

There's nothing I love more than my family. I cherish the recipes that my Irish ancestors have passed down to my family. My grandmother, Maureen Joyce, made Irish Soda bread that was famous...literally. She entered them into several contests, and her bread was consistently in the top three spots.

Not only is this bread delicious and authentic, but it also brings back fond memories of making delicious food with my family.

  • 2 cups all-purpose flour
  • 2 cups Presto Self-Rising Cake Flour
  • 1 cup raisins
  • 1/2 cup sugar
  • 3 cups cold milk
  • 2 tbsp butter

  • Step 1

    Add flour, Presto, raisins, sugar, and milk into a large bowl and mix the ingredients until it's a loose batter.

    Use the butter to grease three bread pans, and pour the batter into the bread pans about 3/4 of the way.
